Salvadore's Baked Tomatoes
4 firm tomatoes        
1/3 cup dry bread crumbs       
 3 T flat Italian parsley, minced       
 1 clove garlic, minced        
11/4 tsp. salt        
1/4 tsp. freshly ground pepper        
1/4 cup Extra Virgin olive oil
 Cut tomatoes in half crosswise. Mix together bread 
crumbs, parsley, garlic, salt, pepper
and 2 T of the olive oil. Spread mixture on the cut 
side of the tomatoes.  Arrange in an
oiled shallow baking pan; sprinkle with remaining oil. 
Bake at 400 degrees for fifteen
minutes.  Serves 4
