AO SWORDFISH STEAKS, AROMATIC
4	SWORDFISH steaks, 1/2 lb each, about 1 inch thick
1/4	cup chopped fresh CORIANDER
1/4	cup chopped PARSLEY
1	GARLIC clove, coarsely chopped
1 1/2	tspns PAPRIKA
1/2 	tspn ground CORIANDER
1/4 	tspn ground CUMIN
1	pinch CAYENNE pepper
2	Tbspns fresh LIME or LEMON juice
3 	Tbsns OLIVE oil

1]  Pat the swordfish steaks dry.  In a food processor, 
make a marinade paste by conbining
the fresh coriander, parsley, garlic, paprika, ground 
coriander, cumin, cayenne andlime
juice.  With the machine on, add the olive oil.
2]  In a large plastic bag or in a bowl, layer the swordfish 
steaks with the marinade,
putting some between each steak.  Seal tightly and marinade 
in the refrigerator for 1 -2
hours.
3]  Remove the steaks from the marinade, season lightly 
with salt.  Grill the steaks 4 - 5
minutes per side until just opaque throughout.
Serves 4
Set off with an oak-aged Chardonnay
