Subj:  Impossible Chicken Pie

IMPOSSIBLE CHICKEN PIE
1 fryer
2 c water 2 tsp salt, divided
1 c mozzarella cheese, divided
1-  6 oz can tomato paste
1 tsp oregano
1/2 tsp basil
1/2 c cottage cheese
2/3 c prepared biscuit mix
1 c milk
2 eggs
1/4 tsp pepper
Place chicken in water with 1 tsp salt, cover and simmer about 45 min. Cool, bone and
skin chicken and cut into bite-size pieces.  Should be about 3 cups.  Place in lage bowl;
add 1/2 cup mozzarella cheese, tom. paste, oregano, basil; then stir to mix and set aside.
In a lightly-greased large quiche dish place cottage cheese and spread evenly.  Place
chicken mixture over cottage cheese and spread evenly.  In a bowl, place biscuit mix,
eggs, milk, 1 tsp saltand pepper.  Beat 1 minute.  Pour over chicken.  Bake 350 degrees
about 30 min until knife comes out clean.  Remove from oven and sprinkle with 1/2 c
mozzarella cheese.
Serves 4.
Tip:  You may dispense with the whole chicken and use boneless  breast or your
preference-  this is a good recipe.  I used to make it often.
